Happy National Chip and Dip Day!

One of my favorite kitchen appliances is the slow cooker. When I found a French Onion Dip recipe that used a slow cooker to caramelized onions I knew I had to make it for National Chip and Dip Day!

To caramelize the onions in the slow cooker you only need 6 yellow onions, 1/4 cup olive oil, salt and 1 tablespoon butter. Start by cutting the onions. Place them in the slow cooker, pour olive oil on top and sprinkle with salt. Give a good mix to break up the onions and cover all in oil. Cut butter into smaller pieces and place on top of the onions. Place lid on top and cook on low for 12 hours. I stirred the onions every few hours but really you can just set it and forget it!

After 12 hours I let the onions cool and put them in a container to use when needed. The dip recipe only calls for 3/4 cup.

French Onion Dip

Ingredients

  • 3/4 Cup Sour Cream
  • 1/2 Cup plain Greek Yogurt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1 teaspoon fresh thyme, chopped up
  • 3/4 cup caramelized onions, chopped small

Combine all ingredients in a bowl, mix well. Refrigerate until needed.
